It’s also the perfect time to bake as we all continue to socially distance ourselves.
Whats better than baking up a storm when you can’t take part in your normal activities?
Bake bake bake.
This recipe is perfect for a free afternoon or if you happen to be having guests over last minute as the ingredient list is small, and basic.
I used to love to bake.
But after my dad died I wanted nothing to do with it, he was the sweet tooth in the family after all. It wasn’t until recently that I picked up the sugar once again, and felt the homeliness and happiness that baking used to give me.
With summer on its way a blend of strawberry raspberry seemed to be the best choice as it’s in season, local, and just so darn good.
The best part is most of the ingredients needed you most likely already have.
Sugar, check.
Flour, check.
Egg, check.

Cooking and/or baking recipes are most attractive when they’re easy, and effortless. That’s why every recipe on this site will be approachable because honestly after all the stress the day brings, why worry about fancy ingredient lists and hours of prep time?

I decided to make this on Mother’s Day following an afternoon walk and it was a great way to end the day. I made the dough before the walk, popped it in the fridge to let it harden and took it out once I got home.
Same with the filling.
Making the strawberry raspberry crostata in steps like that made a lot of sense. Rather than doing it all at once, not that it’s a difficult recipe. Giving yourself an hour in between to go for a walk, listen to a podcast, or do something you enjoy.
Marrying two enjoyable self-care activities into one, baking and another hobby.
Really taking time in the afternoon, evening, morning or whenever you plan on making the raspberry strawberry crostata.

You can add ice cream, home made whipped cream, or whatever else you wish to bring it to life in a customized way.
I added local vanilla bean ice cream to mine while it was still warm, I don’t often eat ice cream but I find they are perfect with warm desserts like these.
Especially in the summer, you get the both of both worlds.

How I Plan on Changing Up The Recipe
Going into the summer months I plan on swapping out the filing and adding peaches. Think peach raspberry, or strawberry peach, or even peach rhubarb.
The possibilities are endless, all you need is an imagination for the filling.
Another option would be to batch make the crust and keep it in the fridge wrapped in saran wrap for a later date, you could double or triple the recipe and make two or three disks.
